Delicious rice bowls are what you need if you want to have a satisfying meal. It’s a complete meal unto itself with rice, meat, vegetables, and all the other good stuff. It is also a nutritious option for those who eat healthily. So for a warm and filling meal with your family, try these BBQ Rice Bowls!

Korean Style Beef BBQ Rice Bowl

What do you need:

  • 1/2 kilo of roast beef in au jus, heated

  • 1/4 of kilo of jasmine rice, cooked

  • 1 clove of garlic finely chopped

  • 4 cups baby spinach

  • 2 cups carrots, grated

  • 1 cup mushrooms, quartered

  • 2 tablespoons plus 1 teaspoon Korean barbecue sauce

  • 1 tablespoon of water

  • 1 tablespoon vegetable oil, divided

  • 1 teaspoon minced fresh ginger root

Heat 2 teaspoons of vegetable oil in a skillet and cook the mushrooms until tender, about 3 to 4 minutes. Place in a bowl and add 1 teaspoon of barbecue sauce. Set aside. Using the same skillet, whisk together the garlic, spinach, and water until the vegetables are cooked through. Transfer to a separate bowl. For the remaining oil in the pan and cook the carrots and ginger for 1 minute. Divide the rice into 4 bowls. Also divide the meat and vegetables into 4 bowls and drizzle each with the remaining barbecue sauce.

Slow-Roasted Chicken Rice Bowl

What do you need:

For the roast chicken

  • 4 boneless, skinless chicken breast halves

  • 1 bottle of barbecue sauce

  • 1/2 cup Italian salad dressing

  • 1/2 cup brown sugar

  • 2 tablespoons Worcestershire sauce

For the rice bowl

  • 1/4 of kilo of cooked white rice

  • 3 onions, diced

  • 2 cups black beans

  • 1 1/2 cups grated cheese of your choice

  • 1 cup of corn kernels

  • 1 cup sauce

  • 1 cup ranch dressing

Mix 2/3 bottle of barbecue sauce, salad dressing, brown sugar, and Worcestershire sauce in a bowl. Stir to combine the ingredients well. Place the chicken breasts in a slow cooker and pour the mixture over the chicken. Cook on high for 3 to 4 hours or low for 6 to 8 hours. When done, remove chicken from slow cooker and squeeze out juices. Shred the chicken and place it in the slow cooker. For the rest of the barbecue sauce over the meat and stir to coat. To assemble rice bowls, place rice in serving bowls and top with simmered rotisserie chicken. Divide the onions, black beans, and corn into bowls. Top with salsa or ranch dressing or both. Serve immediately.
